Thai Sweet Chilli Dipping Sauce
Sweet chilli sauce is one of the most versatile condiments in any kitchen. Making it at home takes 15 minutes and the result beats every commercially produced version.
Ingredients
- 6β8 red chillies (fresno, cayenne, or bird's eye for more heat)
- 4 garlic cloves
- 150ml rice wine vinegar
- 150g sugar
- 150ml water
- 1.5 tsp salt
- 2 tsp cornflour mixed with 2 tbsp cold water
Method
- Roughly blend chillies and garlic (leave some texture).
- Combine vinegar, sugar, water, and salt in a saucepan. Bring to a boil.
- Add the blended chilli mixture and simmer for 5 minutes.
- Stir in the cornflour slurry. Simmer for 2 more minutes until thickened.
- Cool and bottle.
Adjustments
- More heat: Include seeds and use bird's eye.
- More garlic: Double the garlic.
- Thicker: Add more cornflour slurry a little at a time.
Uses
Spring rolls, dumplings, grilled prawns, fried chicken, as a glaze for roasted vegetables.
