Fermented Hot Sauce (Louisiana Style)
Fermented Hot Sauce β Louisiana Style
Lacto-fermentation transforms fresh chillies into something with depth, complexity, and a gentle tang. This is the base technique behind most of the world's great hot sauces.
Ingredients
- 500g fresh red chillies (cayenne, bird's eye, or tabasco work well)
- 3 cloves garlic
- 1 tbsp non-iodised salt (about 2% of total weight)
- Water (filtered or bottled β chlorine kills fermentation)
Method
Blend chillies, garlic, and salt into a rough mash. Transfer to a clean glass jar. Push the mash below the surface with a weight.
Ferment at room temperature (18β24Β°C) for 7β14 days. Burp the jar daily. You'll see bubbles within 24β48 hours β that's lacto-bacteria at work.
After fermentation, blend the mash with white vinegar (start with 100ml and adjust). Strain for a smoother sauce, or leave textured.
What to expect
The sauce will be tangier, deeper, and more complex than a cooked sauce. The fermentation develops lactic acid, which adds subtle sourness and preserves the sauce naturally.
Storage
Refrigerate. Properly fermented sauce keeps for 6β12 months.
