How to Freeze Fresh Chillies
Freezing is the fastest preservation method and keeps chillies usable for 12β18 months. Unlike drying, it preserves fresh flavour and texture well enough for cooking.
Raw freezing vs blanching
Raw freezing works for most chillies. Wash, dry thoroughly (moisture causes ice crystals), and freeze in a single layer on a tray before transferring to bags. This preserves flavour best.
Blanching (dipping in boiling water for 2 minutes, then ice water) is recommended for thicker-walled varieties like poblano or bell pepper. It helps retain colour and slows enzymatic breakdown, but isn't necessary for thin-walled chillies like bird's eye or cayenne.
Step-by-step: raw method
- Wash chillies and dry completely β pat dry and air-dry for 30 minutes.
- Spread in a single layer on a baking tray lined with parchment.
- Freeze for 2β3 hours until solid.
- Transfer to labelled zip-lock bags, removing as much air as possible.
- Return to freezer. Use within 12 months for best quality.
Best varieties for freezing
- Bird's eye/peri-peri: Freezes excellently. Use from frozen directly in cooking.
- JalapeΓ±o: Slices well after freezing. Good for cooked dishes.
- Habanero: Works well raw-frozen. Flavour holds.
- Roasted chillies: Freeze after roasting. Ready to use in stews and soups.
Defrost tips
For cooked dishes, add frozen chillies directly β no need to defrost. For fresh use (salsa, garnish), defrost in fridge overnight; texture will be softer but flavour intact.
