Chilli Varieties: The Three Main Species

There are five domesticated Capsicum species, but three account for the vast majority of chillies in cultivation worldwide. Understanding the differences helps with growing, cooking, and flavour pairing.

Capsicum annuum

Common varieties: Jalapeño, cayenne, serrano, poblano, ancho, paprika, bell pepper

Characteristics: The most widely grown species. Enormous variation from sweet bell peppers (0 SHU) to cayenne (50,000 SHU). Generally: faster growing, more tolerant of cooler conditions than the other species, and highly productive.

Flavour profile: Clean heat, grassy and bright notes. Most versatile for cooking.

Best for: First-time growers, general cooking, sauce-making.

Capsicum chinense

Common varieties: Habanero, Scotch bonnet, ghost pepper (bhut jolokia), Carolina Reaper, Pepper X, Trinidad Moruga Scorpion

Characteristics: The species responsible for virtually all super-hots. Generally slower to germinate (21–28 days), longer to first harvest (90–150 days), and requires consistently high temperatures. Flavour is often fruity and floral.

Flavour profile: Fruity, tropical, sometimes sweet before extreme heat. The most complex-tasting chilli species.

Best for: Experienced growers, extreme sauce-making, heat challenges.

Capsicum frutescens

Common varieties: Tabasco, African Bird's Eye (peri-peri), Thai bird chilli

Characteristics: Small, upright-pointing fruits. Productive, often perennial in warm climates. Moderate to high heat. The peri-peri (frutescens) naturalised so thoroughly in Africa that it's often considered a native species.

Flavour profile: Sharp, direct heat. Less fruity than chinense, more immediate than annuum.

Best for: African and Southeast Asian cooking, hot sauces, drying.
